Open vats respecting unique grapes
The quality of the grapes harvested from Viñas del Cenit is so high that the work carried out in the winery focuses on pampering the grapes without altering their properties. In spite of the grape reaching the winery in an almost perfect condition, it goes through a double selection table with the aim of making sure that all the grapes used have the maximum level of quality.
Viñas del Cenit has 32 open stainless steel vats at a controlled temperature to make their wines. These types of vats allow carrying out extremely carefully made, different wines. This system permits making wines from different areas of the vineyard individually. They are equivalent to the old winepresses, where the essence of these centenarian grapes is extracted. They are ideal to ferment the Tempranillo variety grown in this area, as the musts are perfectly oxygenated during the alcoholic fermentation and remain in contact with the thick grape skins.
Each vat is taken care of individually with the aim of extracting the best qualities of each vineyard. Plunging and pumping over is carried out manually, which help extract the best qualities from the skins and provide these wines their special character. Once the alcoholic fermentation ends and after a light pressing, the wines are introduced directly in barrels to carry out the malolactic fermentation.
With regard to the ageing of our wines, the combination of this Tempranillo variety and French oak barrel is perfect in this area. The barrel is always used to strengthen the enormous personality of this variety, in such a way that the wood is always in the background, allowing the character of the old vineyards to stand out.
